I am not a Salad person, BUT salads like this one, with meat, cheese and beans, are soooo goooddddd!

My mom has a condo in Florida and I went down there with her in December for a couple of days. We went to a restaurant called Grand Lux CafĂ© and shared a Southwestern Salad. I know you’re thinking: Really, you shared a salad? The salad was huge! The waitress told us to share because it was really big. Thank god she did because she was right!!!

Southwestern SaladAnyways, I liked the salad so much that I decided to try to recreate it at home. We also had it with Karl’s parents and they really liked it too!

Course: Lunch    Yield: 14 servings    Prep Time: 10 mins    Cook Time: 15 mins  


Ingredients

  • 8 Cup of mixed greens
  • 1 Cup of cheddar, shredded
  • 1 Cup of black beans
  • 1 Cup of corn
  • 4 chicken breast, cooked and sliced
  • 1 Cup of fresh salsa
  • 1/4 Cup of olive oil
  • 1/3 Cup of freshly squeezed lime juice
  • 1 garlic cloves, minced
  • 1 1/2 Tablespoon of fresh cilantro, chopped
  • a pinch of salt
  • a good pinch of chipotle powder
  • a good pinch of cumin
  • 2 fresh and ripe avocados, sliced in 1/4 in slices

Instructions

  1. This is quite easy to do! Start by cooking your chicken breast on the BBQ until fully cooked, about 12 minutes on 375. Season your chicken with salt and pepper and a bit of chipotle powder. Making your dressing: Mix in your lime juice, your olive oil, the minced garlic, the cilantro, the salt, the cumin and the chipotle powder. Wash your greens and make a layer on your plates. Take your grated cheese and sprinkle some on your greens. Sprinkle some beans and some corn as well. Place about 7 slices of chicken on top. drizzle some salsa on top, as well as some of the lime dressing. Place a few avocado slices on top of the whole and garnish with fresh cilantro!
