I know…I tried to make it look as good as possible but some dishes are just not meant to look absolutely beautiful… BUT! It is quite delicious and quite healthy too!

I do this recipe in a freestyle way, mening that I put the veggies I have on hand but I do try to aim for some peppers,onions,garlic,mushrooms and spinach. I use chicken thighs because I think the meat has so much more flavor than a chicken breast but it is really up to you! I would emphasize on putting fresh spinach because spinach are sooo good for you and I personally try to add them to almost every meal I make.chicken cacciatore

Start this in the slow cooker before leaving for work in the morning and come back to house that smells like heaven!

Karl and I always make chicken cacciatore when we are in a hurry because it really only takes 5 minutes!

Course: Dinner    Yield: 8 servings    Prep Time: 10 mins    Cook Time: 180 mins  


Ingredients

  • 2 900ml jar of tomato sauce (basil, garlic,etc) make sure it has spices in it!
  • 10 chicken thighs, boneless and skinless
  • 1 spanish onion, thinky sliced
  • 1 green pepper, chopped in 1/2 inch cubed
  • 1 Cup of sliced mushrooms
  • 4 garlic cloves, minced
  • 4 Tablespoon of hot sauce
  • 1 Tablespoon of italian herbs seasoning
  • 2 Cup of fresh baby spinach
  • 1 Cup of mixed rice (basmati,brown basmati and wild rice style)

Instructions

  1. Start by putting your chicken thighs at the bottom of your slow cooker, side by side.
  2. Pour the sauce over top of the chicken. Add in the onions,peppers,mushrooms,garlic cloves, seasoning. Mix the top to make sure the veggies are evenly spread.
  3. Start your slow cooker on high and let it cook for 30 minutes (if you are leaving for work, just put in on low and go on with your day :) ). Bring your slow cooker down to low and let cook for 2 to 3 hours (again, if you are going out for the day, leave it on low for the whole time and do the following steps when you get home). Add in your spinach and your rice and let cook for another hour.
  4. Test your rice and if it is cooked, it's ready, if not let it cook for a bit longer. Just before serving, stir in your hot sauce.
  5. Enjoy!
