If you have kids, make these awesome Smarties Sandwiches and they will love you forever! (Food did buy my love when I was a kid! Well….partially!)

Smarties + Cookies + Ice Cream!? YUM!

I have to admit that I don’t have kids and I still love me some ice cream sandwich!

Don’t think about the calories, just do it!

We have the cutest little neighbours ever and I like to make sweets for them! They inspired me for this recipe.

So I went over to their house and gave them some Smarties sandwiches and took pictures of them at the same time. They are so, so, so adorable and smart!

His younger brother Tristan was too shy to take pictures so I took a picture of him later on when he was playing with his brother.

Look at his eyes!!! He’s going to be a heartbreaker for sure!!!

Needless to say, the kids devoured their treats!

It’s the best treat on a hot summer day!

Course: Dessert    Yield: 12 servings    Prep Time: 15 mins    Cook Time: 15 mins  


Ingredients

  • 2 Cup of smarties (1 cup chopped, the other left intact)
  • 2 1/4 Cup of rolled oats
  • 1 2/3 Cup of all purpose flour
  • 1 Teaspoon of baking soda
  • 1 Teaspoon of baking powder
  • 1 Cup of packed brown sugar
  • 3/4 Cup of white sugar
  • 1 Cup margarine
  • 2 large eggs
  • 1 Teaspoon of vanilla extract
  • 1 package of Nestle (or any other brand) Smarties Ice Cream

Instructions

  1. Preheat oven to 375 F. In a small bowl, mix together rolled oats, chopped smarties, flour, baking soda, baking powder and salt. In a separate bowl beat sugars and margarine until creamy. Beat in eggs and vanilla. Blend in dry ingredients to sugar and eggs mixture. Drop by the tablespoon onto a greased or non-stick baking sheet. Put a few Smarties on top of each cookie. Bake for approximately 9 to 12 minutes or until golden brown. Let cool completely on a cookie rack.
  2. * Make sure to check on your cookies. When the contour is browning, they should be ready (if you want them to be soft and chewy).
  3. Take ice cream out of freezer and let it thaw for 3 to 5 minutes.
  4. Scoop out a bit of ice cream and place it between 2 cookies, just like a sandwich ;).
  5. Enjoy!
