SO. EASY!!!

SO. GOOD!!!

Steph (My friend) and I went to this restaurant called Milestones and we had a super amazing appetizer there. When you think about it, it is quite simple but the flavors together were just great!

The appetizer consisted of:

-Goat cheese, covered with herbs

-Grilled Naan Bread covered with Rosemary, Garlic and olive oil

-Roasted Garlic (the whole head of garlic)

-Fig compote

-Cranberry compote

I tried to recreate this amazing appetizer at home and this is what I came up with! You will see that I didn’t make fig compote. Well ladies and gentlemen, I could not find figs in any grocery store close to my house! (I couldn’t even find already made fig compote!!!). Course: Appetizers    Yield: 2 servings    Prep Time: 15 mins    Cook Time: 35 mins  


Ingredients

  • 1 head of garlic
  • 2 Tablespoon of olive oil
  • 1 full piece of goat cheese covered with herbs
  • 1 Cup of frozen or fresh cranberries
  • 1/4 Cup of white sugar
  • 1/4 Cup of orange juice
  • 2 naan bread
  • 1 spring of fresh rosemary, minced
  • 1 clove of garlic, minced

Instructions

  1. Start by heating up your oven at 375F.
  2. Cut a piece of foil big enough to easily wrap a full head of garlic. On that piece of foil, pour 1 tablespoon of olive oil. Take your head of garlic and slice the bottom part, just enough to expose the garlic cloves (just like in the picture above). Put the head of garlic, cut side down on the olive oil. Wrap the foil around the garlic and put it on a cookie sheet. Put the cookie sheet in the oven and bake for 25 minutes.
  3. In the meantime, in a medium saucepan, put your cranberries, your sugar and your orange juice. Bring the cranberries mixture to a boil and then let it simmer for about 10 to 15 minutes or until all the cranberries have popped and the mixture has reached a compote texture.
  4. Once the garlic is ready, prepare the Naan. Brush olive oil on the Naan and sprinkle the rosemary and garlic on top. Put the bread on a cookie sheet and bake for about 2-3 minutes at 375F. Take out of the oven and with a pizza roller, cut the bread in slices. Put the cranberry compote in a small bowl. Place your cheese, head of garlic, compote and naan on a nice platter and serve immediately.
