So I decided to start doing hot yoga again.

I used to actually be able to concentrate on relaxing, breathing and all that jazz but last night, all I could think about was food while doing this intense yoga pose…! What am I going to make for supper tomorrow? Turkey?…really Alex? (I am Canadian so our thanksgiving was a while ago, which is why I am not sick of eating turkey yet)…. So I decided to try something new: Prosciutto wrapped turkey breasts stuffed with Gruyère Cheese, Roasted Red Peppers and spinach.

Now don’t ask me where I got the inspiration because my brain is one wild thing but you have to admit that it does sound good!! I sure think it does! So on my way home, I stopped at the grocery store to grab what I needed (I kind of forgot that I just finished an intense workout and my hair was all over the place but…ya know, one track mind….)

I decided to make a nice and simple creamy sauce to go with the turkey as well as a nice big serving of rice as my side dish.

I think that the red and green from the veggies inside the turkey are very pretty so I am thinking of making this for Christmas dinner! At least for one of our 4 Christmases….Modern Families..

DAMN this was G-O-O-D!!! And so simple!!!! Needless to say, I ate too much, Again! I now roll to my treadmill… Enjoy!


Course: Dinner    Yield: 4 servings    Prep Time: 15 mins    Cook Time: 50 mins  


Ingredients

  • 2 big turkey breasts (skinless and boneless) or 4 small ones
  • 8-12 prosciutto slices (about 3 to 4 per turkey breast)
  • 1 Cup of fresh baby spinach
  • 1 brick of gruyere cheese
  • 2 roasted red peppers
  • 1 Cup of heavy cream
  • 1 Teaspoon of concentrated beef broth liquid
  • 1 Cup of dry medium grain rice

Instructions

  1. Start by flattening your turkey breast by beating them down a bit.
  2. Put a few spinach leaves in the middle of the turkey breast, along with 2 pieces of roasted peppers and 2 slices of gruyere cheese and roll the breast closed. Wrap the breast with prosciutto.
  3. Put the turkey breasts on a baking sheet and put them in the oven at 350 degree F for about 30 minutes or until the turkey is fully cooked (170F).
  4. Cook a cup of medium grain rice (follow the instructions).
  5. In a small saucepan, bring a cup of heavy cream to a boil along with a teaspoon of concentrated beef broth liquid. Let it simmer for 5 minutes, until it is at a sauce consistency.
  6. Enjoy!
