I remember the first time I heard someone talk about Zucchini bread, I thought to myself; weird!!! OMG was I ever wrong! Zucchini bread is so good and moist! Yum! this recipe is so great!!

Oh and you can also make muffins instead of a loaf of bread!

Zucchini Muffins


Course: Snacks    Yield: 10 servings    Prep Time: 10 mins    Cook Time: 50 mins  


Ingredients

  • 2 eggs
  • 1 1/2 Cup of sugar
  • 1 1/2 Tablespoon of vanilla extract
  • 2/3 Cup of melted unsalted butter
  • 2 Teaspoon of baking soda
  • 3 Cup of all purpose flour
  • 1/2 Teaspoon of nutmeg
  • 1 Tablespoon of cinnamon
  • 1 Cup of powdered pecans (in food processor)
  • 3 Cup of grated zucchini

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the sugar, eggs, and vanilla.
  3. Mix in the grated zucchini and then the melted butter. Sprinkle baking soda and salt over the mixture and mix in.
  4. Gradually add the flour along with the cinnamon, nutmeg and the pecans.
  5. Divide the batter equally between 2 buttered 5 by 9 inch loaf pans.
  6. Bake for 50 minutes and test with a wooden stick to see if it come out clean. If not, bake for another 10 minutes or until the stick come out clean.
  7. If you decide to make muffins instead, bake them for 20 minutes and test them. If the wooden stick does not come out clean, bake them for another 5 to 10 minutes.
