I remember the first time I heard someone talk about Zucchini bread, I thought to myself; weird!!! OMG was I ever wrong! Zucchini bread is so good and moist! Yum! this recipe is so great!!

Ingredients
- 2 eggs
- 1 1/2 Cup of sugar
- 1 1/2 Tablespoon of vanilla extract
- 2/3 Cup of melted unsalted butter
- 2 Teaspoon of baking soda
- 3 Cup of all purpose flour
- 1/2 Teaspoon of nutmeg
- 1 Tablespoon of cinnamon
- 1 Cup of powdered pecans (in food processor)
- 3 Cup of grated zucchini
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the sugar, eggs, and vanilla.
- Mix in the grated zucchini and then the melted butter. Sprinkle baking soda and salt over the mixture and mix in.
- Gradually add the flour along with the cinnamon, nutmeg and the pecans.
- Divide the batter equally between 2 buttered 5 by 9 inch loaf pans.
- Bake for 50 minutes and test with a wooden stick to see if it come out clean. If not, bake for another 10 minutes or until the stick come out clean.
- If you decide to make muffins instead, bake them for 20 minutes and test them. If the wooden stick does not come out clean, bake them for another 5 to 10 minutes.
