I’m sure all of you know how good sweet potatoes are for you. They are an amazing source of vitamin A and they are also super yummy! I always try to make new things with them. So far, my three favourites are sweet potato fries (of course), sweet potato gnocchis and sweet potato, butternut squash and cinnamon soup. This is the recipe I make the most because it is the quickest one to prepare. I dip them in curry mayo, which I make from scratch, but you can also just mix in curry powder with mayo.

Baked Sweet potato fries


Course: Snacks    Yield: 4 servings    Prep Time: 10 mins    Cook Time: 20 mins  


Ingredients

  • 3 sweet potatoes (big ones)
  • 1 1/2 Tablespoon of onion powder
  • 1 1/2 Tablespoon of paprika powder
  • 1 1/2 Tablespoon of garlic powder
  • 1/4 Cup of olive oil
  • 1 Tablespoon of sea salt
  • 1 1/2 Tablespoon of cumin powder

Instructions

  1. Start the oven at 450F.
  2. You can choose to peel the potatoes or not (I don't).
  3. Cut the potatoes into fries, about 1 centimetre in height and width.
  4. Put the fries on two cookie sheets.
  5. Sprinkle them with the spices and the salt. Drizzle the fries with olive oil and move the fries around to make sure they are all well coated.
  6. Make sure the fries are not touching each other so they can bake well.
  7. Put the cookie sheet in the preheated oven and bake for 20 minutes. Flip them half way.
  8. Make sure to test them after 15 minutes to see if they are ready since your fries might be bigger or smaller than mine. (The type of oven makes a difference in the baking time as well).
