CHOCOLATE is my crack! No need for drugs if I have my truffles! Chocolate makes me happy!

So guess what I’ll be making for Christmas??? And for New Years Eve??? And for everyone’s birthday??? HA HA!

Elyssa, my (little, but not so little anymore) sister, made us truffles just before leaving for LONDON, UK (I know, I am equally jealous of her). Her truffles were extra special because they were rolled in Skor pieces… Oh yeah, you heard me! SKOR!

So since I was crying like a baby for days after she left (Imagine when I’ll have my own kids….geeezzz…) I decided to make the truffles she made for us!

Here’s the wonderful, and incredibly amazing/easy to make recipe!!!

Course: Dessert    Yield: 16 servings    Prep Time: 185 mins    Cook Time: 5 mins  


Ingredients

  • 6 Ounce of semi sweet chocolate, finely chopped
  • 3/4 Cup of heavy cream (35%)
  • 1 Tablespoon of corn syrup
  • 1/2 Teaspoon of vanilla extract
  • 1 Tablespoon of butter
  • 1/2 Cup of Skor pieces

Instructions

  1. Place the chocolate in a medium bowl and put aside.
  2. In a sauce pan, bring the cream and corn syrup to a boil. Turn the heat off and add in the vanilla. Poor on the chocolate and let it sit for a minute without touching it.
  3. With a whisk, mix the cream and the chocolate until it creates a smooth ganache (smooth and creamy chocolate spread). Mix in the butter, cover it and refrigerate for 3 hours or overnight if possible.
  4. Put parchemin paper on a cookie sheet.
  5. With a spoon, scoop out about a tablespoon of the ganache and shape it into a ball with the palm of your hands. Make sure you wash your hand in cold water frequently and dry them well so the truffles don't stick to your hands and melt. Put each and every truffle on the cookie sheet. Once you are done, put the cookie sheet in the fridge for 30 minutes. Take them out and roll them in the skor pieces. Place them on a serving plate and put the plate back in the fridge until about 20 minutes before they are ready to be served.
  6. They will keep for a week in the fridge and about 3 months in the freezer.

    I left mine for over 3 hours and washes my hand in cold water but it melts to my hands??? Help

    • Hi Kelley! Make sure to dry your hands completely before rolling them. It is really not easy to do and really messy. You can grab a bit with one spoon and spoon it out with another spoon and start making the truffles at that point. Another thing you could try if it does not work is putting a bit of cocoa powder on your hands to make sure the chocolate mixture does not stick. Hope this helps 🙂
