It’s Friday, it’s Friiiiiiday!

Yes, I am that excited about the week end!

Why? Because I get to cook!

Why are you excited about the week end? Because you get to make these amazing Salmon Burgers!

While we were in Europe, we got to go visit one of my colleagues’ mother in Belgium. She and her husband are incredible cooks and fervent foodies so needless to say, we got along very well!

We stayed with them for a few days and were treated like royalty. We ate amazing meals and these burgers were part of one of them.

 

I had always been skeptical about salmon burgers because salmon’s got such a flaky texture that I never thought they could hold up on the BBQ.

Boy, was I ever wrong! These were amazing! The texture and flavour were just fantastic! I made sure to ask her for the recipe!

And he we are today! Eating salmon burgers once every two weeks!

So get your salmon ready and make some salmon burgers this week end!

Course: Dinner    Yield: 4 servings    Prep Time: 40 mins    Cook Time: 15 mins  


Ingredients

  • 1/2 Cup of mayonnaise
  • 2 Tablespoon of fresh lemon juice
  • 2 Tablespoon of capers, drained and chopped
  • 1 Tablespoon of sweet pickle relish
  • a pinch of salt and pepper
  • 1 Cup of panko crumbs
  • 1/2 Cup celery, chopped
  • 1/4 Cup of chopped onions
  • 1/4 Cup of fresh chives
  • 1 large egg white
  • 1 Tablespoon of siracha or hot sauce
  • 1 Tablespoon of lemon juice
  • 1 a pinch of salt and pepper
  • 1 Pound of skinless salmon, cut into small cubes
  • 4 burger buns of your choice
  • shredded lettuce to serve
  • sliced tomatoes to serve

Instructions

  1. *First 5 ingredients are for the mayo.
  2. **Next 10 are for the burgers
  3. Combine all ingredients for the mayonnaise in a bowl and chill until ready to serve.
  4. Pulse crumbs, celery, onion, chives, egg white, siracha (or hot sauce), lemon juice, salt and pepper in a food processor until minced. Add the salmon and pulse briefly; chunks should still be visible.
  5. Form salmon mixture into four patties, gently shaping it to fit the size of the buns. Rub each patties with olive oil and grill 4 minutes per side or until cooked through.
  6. Enjoy!
