Oh granola bars.

How you make me happy when I’m starving at work!

(which is pretty much all the time, but that’s besides the point!)

You keep me full for hours, which means a lot coming from me!

You give me iron (dates), omega 3 (chia seeds, pumpkin seeds and flax seeds), protein (peanut butter & quinoa), antioxidants (cranberries, maple syrup & honey) and vitamin E (sunflower seeds).

All of that while keeping it delicious!

Amen!

No but seriously, this recipe is packed with goodness! I have a bar every afternoon and it keeps me full until dinner time, which is really a big thing for me since I am hungry every two seconds (it seems).

If you’re just like me, make yourself a batch and you’ll be good for a few weeks!

Course: Dessert    Yield: 18 servings    Prep Time: 20 mins    Cook Time: 35 mins  


Ingredients

  • 4 Cup of quick oats
  • 3 Tablespoon of flax seeds (grounded)
  • 3 Tablespoon of chia seeds
  • 6 Tablespoon of shredded unsweetened coconut
  • 1/2 Cup of dry-roasted unsalted peanuts
  • 3/4 Cup of honey
  • 1 Cup of peanut butter
  • 1/2 Cup of dried cranberries
  • 1/4 Cup of chocolate chips (dark)
  • 1 Cup of puffed quinoa
  • 1/2 Cup of maple syrup
  • 1/4 Cup of sunflower seeds
  • 1/4 Cup of pumpkin seeds
  • 9 medjool dates

Instructions

  1. Start your oven at 350F.
  2. I a big bowl, mix all of the dry ingredients together.
  3. In another bowl, mix the maple syrup peanut butter and honey together.
  4. Thoroughly mix the liquids in with the dry ingredients. This might take up to 4-5 minutes and you might have to use you hands to make sure everything is well coated. In two 8x8 square oven proof deep dish, place parchment paper and press your granola mix in the dish. Put your back into it! Make sure that your press it down quite well to ensure it stays together as mush as it can.
  5. To make sure the granola doesn't stick to your hands, wet your hands before pressing down on the granola.
  6. Put in oven for 35 minutes, checking to make sure the corners to not get burned.
  7. Enjoy!
