Peanut Butter is my boyfriend’s favourite thing ever so I decided to make him some cookies today! I have to say that these cookies are great! If you have someone in your family who loves PB, make these cookies!!

Ingredients

  • 1 Cup of margarine (bakes more evenly than butter)
  • 1 Cup of smooth peanut butter
  • 1 Cup of white sugar
  • 1 Cup of brown sugar
  • 2 1/2 Cup of all purpose flour
  • 1 Teaspoon of baking powder
  • 1 1/2 Teaspoon of baking soda
  • 2 eggs
  • 1/2 Cup of peanuts (for garnish)

Instructions

  1. Cream together margarine, peanut butter,white and brown sugar. Beat in eggs.
  2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
  3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. ( I add 2 peanuts (1 cut in half) on top to make a pretty decoration, see picture).
  4. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

    do you think i can substitute the flour with pastry flour? or even ww pastry flour?

      I would say yes for the pastry flour but for every cup of AP flour, you have to use 1cup minus 2 tbsp of pastry flour. My choice would be to not use ww since it will change the texture of the cookie quite a bit. 🙂
