I thought I would always prefer Chocolate cookies over any other cookies but these oatmeal cookies are just the best!!! They are chewy and delicious! Yumm!

Course: Dessert    Yield: 12 servings    Prep Time: 10 mins    Cook Time: 15 mins  


Ingredients

  • 2 Cup of all purpose flour
  • 1 Teaspoon of baking powder
  • 1 Teaspoon of baking soda
  • 1 Teaspoon of salt
  • 1 Cup of unsalted butter, at room temperature
  • 1 Cup of white sugar
  • 1 Cup of brown sugar
  • 2 Teaspoon of vanilla extract
  • 2 large eggs
  • 3 Cup of oats (anything but instant oats)
  • 1 1/2 Cup of raisins

Instructions

  1. Preheat oven to 350ยฐ.
  2. Whisk dry ingredients; set aside.
  3. Combine wet ingredients with a hand mixer on low.
  4. To cream, increase speed to high and beat until fluffy and the color lightens.
  5. Stir the flour mixture into the creamed mixture until no flour is visible. (Over mixing develops the gluten, making a tough cookie.) Now add the oats and raisins; stir to incorporate.
  6. Fill cookie scoop with dough.(About two tablespoons)
  7. Drop 2-inches apart onto baking sheet sprayed with nonstick spray.
  8. Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.
  9. Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.

    I tried this recipe and for some reason the “wet” ingredients do not want to cream…. even though I have my hand mixer on high….. it seems like there is too much vanilla extract b/c the mixture looks curdled.

    • Hi Anna, did you continue the recipe? I don’t know why out ingredients are curdling but as long as they are well combined, continue with the steps and the cookies should be fine. Let me know how it goes! I make these all the time and they always turn out great.

    I made these, using a 1/4 cup measure to scoop out the cookie dough and cooking them closer to 20 minutes. They were a big hit! This recipe is a keeper.
