I love making pancakes because it’s always my excuse to get the family together at the table. I tried to make them with oats to make them a bit healthier. I always cut up fresh fruits to put on top but this time I made a blueberry compote with fresh blueberries.

Ingredients
- 2 Cup of oats, old fashioned or quick oats
- 3 Cup of buttermilk
- 3 egg, beaten
- 1/2 Cup of flour
- 1 1/2 Teaspoon of baking powder
- pinch of salt
- 1 Tablespoon of peanut oil
- 1 Tablespoon of vanilla extract
- 2 1/2 Cup of fresh blueberries
- 1/3 Cup of sugar
- 1/3 Cup of water
- 2 Tablespoon of butter, for cooking
- 2 Tablespoon of vegetable oil, for cooking
Instructions
- Put the butter milk in a bowl along with the oats and let them soak overnight (Or at least an hour). If you don't let them soak overnight, put 2 1/2 cups of buttermilk instead of 3.
- Mix in the rest of the ingredients.
- Put a pan of the stove and put your heat on medium high. Add a bit of butter and a bit of oil (the oil prevents the butter from burning). Spread it around the pan and start making your pancakes. I usually use 1/2 cup of batter for a pancake. Wait for bubble to form on top of the pancake before flipping it (about 2 minutes or so). Flip it and cook for about 1 minute, or until the pancake is golden brown underneath.
- I usually pile them up on a plate and put them in the oven at 180F to keep them warm until I am done cooking the rest.
- For the blueberry compote, in a small sauce pan, put 1 1/2 cup of fresh blueberries along with 1/3 cup of water and 1/3 cup of sugar. cook for about 10 minutes on medium heat, until all the blueberries have bursted and made a sauce. Add the rest of the blueberries ad cook for 4 minutes.
