So I think I’m on my 5th or 6th brownie recipe on the blog… What can I say, I love me some brownies!

These are guilt-free! (almost!) Avocados in the ganache,  refined sugar-less, butter-less and Gluten-free! Oh and super delicious!

I’ve made this recipe twice in two weeks. The weather was horrible at that point and I was chocolate-deprived!

 

But seriously, these brownies are delicious and healthy! So go for it!

Course: Dessert    Yield: 15 servings    Prep Time: 20 mins    Cook Time: 20 mins  


Ingredients

  • 6 Tablespoon of coconut oil
  • 3/4 Cup of dark chocolate chips
  • 2 medium sized ripe bananas
  • 1 Teaspoon of vanilla extract
  • 1/3 Cup of pure maple syrup
  • 1 Teaspoon of baking powder
  • 1 large egg
  • 1/4 Cup of unsweetened cocoa powder
  • 1 Cup of brown rice flour
  • 2 medium size ripe avocados
  • 1/4 Cup of unsweetened cocoa powder
  • 1/2 Cup of dark chocolate chips
  • 3 Tablespoon of honey

Instructions

  1. Start by preheating the oven to 350°F.
  2. Take a 8x8" baking dish and line it with parchment.
  3. Ina small sauce pan, heat coconut oil and 3/4 cup of chocolate (on low heat!) until completely melted. Make sure you stir frequently so it does not cook on the bottom of your pan :). Place in a bowl and set aside to cool down.
  4. In a medium mixing bowl, thoroughly mix the flour, cocoa powder and baking powder.
  5. In a stand mixer bowl,mash the bananas, mix int he vanilla and maple sugar. add in the egg and whisk until very well blended.
  6. Slowly add in the melted chocolate mixture and mix well.
  7. Stir in the flour mixture and blend just until combined. Do not over mix :)
  8. Gently pour the brownie batter into the prepared pan and bake for 20 minutes or until a toothpick inserted into the middle comes out clean.
  9. Place the brownies in the fridge while you prep the ganache.
  10. On to the ganache now! Start by Melting 1/2 cup of chocolate chips with the honey until completely melted. Set aside.
  11. Scoop out the flesh of the avocado and place it in a blender or food processor. Puree until smooth.
  12. When fully smooth, add cocoa powder and melted choco-honey mixture and puree until completely mixed.
  13. Smooth out the ganache on the brownies, cover and refrigerate overnight.
  14. I know you want to eat them now but they will be much better when cold, I promise!!
