This is a fresh and healthy breakfast that I make often with what I have in the fridge. This time I had Tarragon and Chives but you can make this with which ever fresh herb you have on hand!

Ingredients
- 2 large eggs
- 1 fresh spring of tarragon
- 1 1/2 Tablespoon of fresh chives, chopped
- 1/2 Cup of sliced button mushrooms (optional)
- 1 1/2 Tablespoon of freshly grated parmesan
- 1 Tablespoon of heavy cream
- 1 Tablespoon of butter
- salt and pepper
Instructions
- In a medium bowl, whisk together the two eggs.
- Add the cream, fresh herbs, Parmesan, mushrooms and the seasoning and whisk well.
- On medium heat, melt the butter in a pan. Once the butter is melted, stir in the egg mixture.
- Stir the mixture until the eggs are cooked to your liking.
- Enjoy!
