This is a fresh and healthy breakfast that I make often with what I have in the fridge. This time I had Tarragon and Chives but you can make this with which ever fresh herb you have on hand!

Course: Breakfast    Yield: 1 servings    Prep Time: 5 mins    Cook Time: 5 mins  


Ingredients

  • 2 large eggs
  • 1 fresh spring of tarragon
  • 1 1/2 Tablespoon of fresh chives, chopped
  • 1/2 Cup of sliced button mushrooms (optional)
  • 1 1/2 Tablespoon of freshly grated parmesan
  • 1 Tablespoon of heavy cream
  • 1 Tablespoon of butter
  • salt and pepper

Instructions

  1. In a medium bowl, whisk together the two eggs.
  2. Add the cream, fresh herbs, Parmesan, mushrooms and the seasoning and whisk well.
  3. On medium heat, melt the butter in a pan. Once the butter is melted, stir in the egg mixture.
  4. Stir the mixture until the eggs are cooked to your liking.
  5. Enjoy!
