Strawberries, Chocolate; Valentine’s day is in the air!!!

I know I am like 3 weeks in advance but if you are like me, an over achiever / crazy planner, well you are already thinking about Valentine’s day supper. As I said it before, i’m not that much of a “Valentine’s day” fan but I do like to prepare a great meal for my great man so here I am testing out recipes to see what I am going to be making on the 14th.

I have to admit, I have it easy since Karl likes everything but DILL (I know right, so weird…). So I kind of have a blank canvas to work with! Since it’s Valentine’s day and Chocolate and Strawberries are classics, I am trying to play around with that to find the perfect dessert.

For this recipe, I used the same recipe as my previous post Croquembouche to make the Puff Pastry part and added cocoa powder to it to make them chocolaty.

For the Ice Cream part, follow my previous Strawberry and Vanilla Ice Cream recipe.

Course: Dessert    Yield: 4 servings    Prep Time: 10 mins    Cook Time: 30 mins  


Ingredients

  • 1/2 Cup of water
  • 1/4 Cup + 2 tablespoon of butter
  • 4 Tablespoon of cocoa powder
  • a pinch of salt
  • 1/2 Cup of all purpose flour
  • 2 large eggs
  • 2 Tablespoon of white sugar
  • 1/2 Cup of heavy cream (35%)

Instructions

  1. Heat up your oven to 425F.
  2. In a small bowl, mix four and cocoa powder.
  3. In a medium sauce pan, bring the water and the butter to a boil. Mix in salt and flour mixture until it becomes a ball and turn off the heat.
  4. Transfer your ball into a stand mixer and mix in your eggs, one at a time. When your mixture is well mixed and smooth, transfer it in a piping bag or a Ziploc bag and cut the end. On a cookie sheet with parchment paper on it, pipe about 3 tablespoons of the mixture at a time on the cookie sheet, making tiny balls. When you are done, dip 2 fingers in water and flatten out the top of each puff pastry, to make sure they bake and grow in a nice shape. Put them in the oven for about 20 minutes.
  5. In the meantime, in a sauce pan, melt a 2 tablespoons of butter. Add in 2 tablespoons of cocoa powder and 2 tablespoon of sugar. mix well and add 1/2 cup of heavy cream. Mix well, bring to a boil and simmer for 2 to 3 minutes. Stir frequently so the cream does not burn. Turn heat of and reserve.
  6. When the puff pastries and done baking, take them out of the oven and put them on a cooling tray. When cooled, cut in half and put a scoop of ice cream in between both pieces and drizzle with chocolate sauce.

  8. Serve with fresh strawberries.
