So lately I’ve been cheating on cookies with these wafers. One word: Amesomeness! (Is that even a word?)

These are so thin and cute and delicious!

Since they’re so thin, you don’t have to feel guilty if you eat 3….or 10….right?

Plus I used dark chocolate!! It can almost be called healthy! ahaha….

But Seriously….Very yummy!

You get a hint of honey in there….yum!

Recipe slightly altered from : Donna Hay – Simple Essentials Chocolate- HarperCollins Publishers Ltd (2007)

Course: Dessert    Yield: 18 servings    Prep Time: 20 mins    Cook Time: 20 mins  


Ingredients

  • 50 Gram of butter, chopped
  • 2 Tablespoon of honey
  • 1/3 Cup of brown sugar
  • 1/3 Cup of all-purpose flour, sifted
  • 1/2 Teaspoon of vanilla extract
  • 1/2 Cup of roasted, blanched and chopped hazelnuts
  • 1/2 Cup of high quality dark chocolate, chopped
  • 2 large egg whites

Instructions

  1. Start by preheating your own to 350F.
  2. In a small saucepan, heat up your butter and honey on low heat until melted.
  3. In a medium bowl, put your brown sugar, flour, vanilla and egg whites. Slowly add in your melted butter mixture and whisk until smooth.
  4. Take a cookie tray and line it with parchment paper. Drop 2 teaspoons of mixture on the tray and spread it into a 4 inch circle and sprinkle your hazelnuts and chocolate on top. Leaving about an inch between each wafers, repeat until you have no more space on your cookie sheet. Bake for about 8 to 10 minutes or until golden brown.
  5. Enjoy!

    I made these tonight and had a bit of an issue with them on the parchment. I made 2 batches of 6 on parchment and they both stuck so had to be thrown away. The third I just did on a baking sheet and they turned out fine. I’ll definitely make them again but without the parchment and maybe on a lower temp for a bit longer =) Great, quick, yummy recipe though! Thanks!

    • Really??? Weird! Mine came out perfect with the parchement! I do know that different ovens will give different results but that is weird! I’m sorry they stuck to your parchment ! Hope you enjoyed the ones that actually turned out right πŸ™‚

        Made them again today without the parchment and it worked wonderfully πŸ™‚ I even experimented and made a little bowl out of one lol…would be great for a party or holidays for fruit or ice cream!
