I know,

I am the worst food blogger of the month ( well, for July and August anyways!)!

My last post was July 19th (I know!!)

Well I had a good excuse, at least I think I do!

WORK.

Isn’t this everyone’s excuse for everything? Anyways, in the last few months, I have been soooo busy with work that I was barely ever cooking/baking!

At least my work was extremely fun and interesting! I am lucky enough to be able to use my creativity on a daily basis!

I work in Branding/Marketing and I was working on the Fall catalogue for the company where I work so you can imagine that I was using my creativity 24/7!

I love it πŸ™‚

Anyways! The catalogue was sent to the printer on Friday so needless to say, I have been making food ever since!

Here’s my favorite recipe (from what I have made this week end!).

CARAMEL APPLE CHEESECAKE WITH CRISPY STREUSEL

one word: AMAZINGNESS

It’s basically a cheesecake with an apple crumble on top. COMMON!How was I supposed to pass on that? I mean, it is getting cold out so it is safe to say that bikini season is over, therefore there’s nothing wrong with making a little dessert “comfort” food right?

I love apples and I always get excited when we get close to apple picking season! This recipe will surely be made again and again in my kitchen, I can tell you that!

So whenever you go Apple picking (or grab some apples at the grocery store) think of this delicious dessert! They are good warm, right out of the oven, with some good vanilla ice cream or at room temperature!

Ingredients

  • 2 Cup all-purpose flour
  • 1/2 Cup firmly packed brown sugar
  • 1 Cup butter, softened
  • 16 Ounce 2 package (8oz each) of cream cheese, softened
  • 1/2 Cup of sugar + 2 tbsp, divided
  • 2 large eggs
  • 1 Teaspoon vanilla extract
  • 3 Granny Smith apples, peeled, cored and finely chopped
  • 1/2 Teaspoon ground cinnamon
  • 1/4 Teaspoon ground nutmeg
  • 1/2 Cup caramel topping (I used dulce de leche)
  • the following ingredients are for the streusel
  • 1 Cup of firmly packed brown sugar
  • 1 Cup of all-purpose flour
  • 1/2 Cup of quick oats
  • 1/2 Cup of butter, softened

Instructions

  1. Start by preheating your oven to 350 degrees F.
  2. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 13 by 9 by 2-inch baking pan lined with heavy-duty aluminum foil or with parchment paper. Bake 15 minutes or until lightly browned.
  3. In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, one at a time, and vanilla. Stir to combine (combien well). Pour over warm crust.
  4. In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping (see instructions below). Bake 30 minutes, or until filling is set. Drizzle with caramel topping.
  5. Serve warm or cooled
  6. For the Streusel:In a medium bowl, combine all ingredients.
