Let’s go back in time….. when I was about 16 and I thought working in a coffee shop was the coolest thing ever
Yeah- I did think like that once…
And yes, putting myself in that kind of situation was a bad idea! ( I have a weakness for caffeine)
BUT! The chef used to make this salad everyday, at least that’s I remember him making it and it was so good and fresh!
Go wild and add whatever you think would be good to it !
It’s a great salad for lunches at work and for the kids as well!

Course: Lunch Yield: 8 servings Prep Time: 15 mins
Ingredients
- 1/2 of finely chopped red onion
- 1 green pepper, cut into small cubes (1cm wide)
- juice of a lemon
- 1 Tablespoon of cumin
- 1 1/2 Tablespoon of balsamic vinegar
- 3 Tablespoon of fresh cilantro,chopped
- 1/4 Cup of olive oil
- 1 Cup of chick peas
- 1 Cup of kidney beans
- 1 Cup of black beans
Instructions
- Star by cutting your veggies.
- Then drain and clean the beans and places them in a big bowl. I a smaller bowl, mix the rest of the ingredients very well until blended. Pour the mixture onto the beans and mix well.
- Cover and refrigerate overnight.
