Let’s go back in time….. when I was about 16 and I thought working in a coffee shop was the coolest thing ever

Yeah- I did think like that once…

And yes, putting myself in that kind of situation was a bad idea! ( I have a weakness for caffeine)

BUT! The chef used to make this salad everyday, at least that’s I remember him making it and it was so good and fresh!

Go wild and add whatever you think would be good to it !

 

It’s a great salad for lunches at work and for the kids as well!

Course: Lunch    Yield: 8 servings    Prep Time: 15 mins  


Ingredients

  • 1/2 of finely chopped red onion
  • 1 green pepper, cut into small cubes (1cm wide)
  • juice of a lemon
  • 1 Tablespoon of cumin
  • 1 1/2 Tablespoon of balsamic vinegar
  • 3 Tablespoon of fresh cilantro,chopped
  • 1/4 Cup of olive oil
  • 1 Cup of chick peas
  • 1 Cup of kidney beans
  • 1 Cup of black beans

Instructions

  1. Star by cutting your veggies.
  2. Then drain and clean the beans and places them in a big bowl. I a smaller bowl, mix the rest of the ingredients very well until blended. Pour the mixture onto the beans and mix well.
  3. Cover and refrigerate overnight.

    Are you using ground cumin here? Or cumin seed? I only have ground on hand, but a tablespoon seems like a lot!!
