My mother in law found this recipe 5 years ago in a local newspaper and kept it because it is so good! She gave me the recipe not too long ago and I thought I had to share it with all of you! Enjoy!

Banana PB Chocolate MuffinsSource: Ottawa Citizen, December 20th, 2006 (Desiree Haight’s Recipe)
 

Course: Snacks    Yield: 12 servings    Prep Time: 15 mins    Cook Time: 20 mins  


Ingredients

  • 1 Cup of all purpose flour
  • 1 Cup of whole wheat flour
  • 1/3 Cup of brown sugar
  • 1 Tablespoon of baking powder
  • 1/2 Teaspoon salt
  • 1 large egg
  • 3/4 Cup mashed overripe banana
  • 2/3 Cup of peanut butter
  • 2/3 Cup of vanilla or plain soy milk (or 2% milk with 1tablespoon of vanilla extract)
  • 2 Tablespoon cooking oil
  • 1/2 Cup of semi-sweet chocolate chips

Instructions

  1. Preheat oven at 375 degrees Fahrenheit.
  2. Measure first 5 ingredients into a large bowl and stir them together. Make a well in the centre.
  3. Beat next 5 ingredients with a whisk in a medium bowl. Pour in the well.
  4. Add chocolate chips and stir together until moistened.
  5. Fill the greased muffin pan (3/4 full).
  6. Bake for 18 to 20 minutes or until a wooden toothpick comes out clean.

    Made these with whole wheat pastry flour instead of all purpose and whole wheat, 1/4 cup of brown sugar, and a “flax egg” (3 T hot water, 1 T flax meal) and they are super yummy!
