Since this week is Apple week on I Adore Food and since I have about 100 apples sitting in my kitchen, I have decided to do one of my follower’s recipe! This muffin recipe is just like an apple crumble but in a muffin! It’s great! You really have to try it!

Ingredients

  • 2 Cup All purpose flour
  • 4 large eggs
  • 1 1/4 Cup of white sugar
  • 3 medium size apples, grated
  • 1 Cup of ground walnuts
  • 1/2 Cup of flaked sweetened coconut
  • 2/3 Cup of sunflower oil + 1 tsp
  • 2 Teaspoon baking powder
  • 2 Teaspoon vanilla extract
  • 2 Teaspoon cinnamon
  • 1/2 Cup of chopped butter
  • 1/4 Cup of brown sugar
  • 1 Cup of jumbo oats
  • 2 Teaspoon of water
  • 1 Tablespoon of honey

Instructions

  1. First things first, pre-heat the oven to 350F and line your muffin tin with paper cases.
  2. To make the topping, combine the butter, 3/4 cup of flour and the brown sugar in a mixing bowl and rub together with your fingers until you get a decent crumbly texture. Add the oats and give the mixture a stir.
  3. Lastly, add the water, honey and 1 tsp of oil and stir all together. Set to one side.
  4. In a coffee grinder or food processor, ground the walnuts.
  5. Sift the rest of the flour, baking powder, cinnamon and salt.
  6. In a separate bowl whisk the eggs, the rest of the oil, the white sugar and vanilla. Then add the grated apple and coconut. If you've got a food mixer you can do the apples in that rather than grating them up. Give it a good stir and then finally add the sifted flour mixture and the grounded walnuts.(She put chopped walnuts instead of grinding them)
  7. Don't worry if it looks lumpy - it is supposed to.
  8. Carefully spoon the mixture into the muffin cases and add some of the oat topping to each one. Don't worry if the topping goes in between the cases - these are the best bits when the tray comes out of the oven.
  9. Bake for about 20-25 minutes until golden brown, you can test them by using a skewer - if it comes out clean they are done. Leave them to cool down before serving. The muffins will keep for 3-4 days in a sealed tupperware.
